Sweet Potato and Turkey Bake

A great Thanksgiving side dish to replace that gluten filled stuffing, but can also be enjoyed year round!
Servings: 6

Ingredients
  

  • 4-5 small sweet potatoes  about 6 cups peeled and chopped
  • 4 tbsp avocado oil  divided
  • 4 stalks celery  thinly chopped
  • 2 yellow onions  chopped
  • 1/2 lb ground dark meat turkey
  • 2 eggs  whisked
  • 1 cup chicken or vegetable broth
  • 1 apple  chopped
  • 1/23 tbsp fresh sage or 1 Tbsp dried or 1-2 drops sage pure essential oil
  • 1/2 cup pecans  chopped

Method
 

  1. Preheat oven to 400 degrees. Toss sweet potatoes with 2 tbsp oil, sea salt and pepper to taste. Place on parchment paper lined baking sheet and bake in oven for 20 minutes or until tender.
  2. While sweet potatoes cook, add celery, onions, sea salt and black pepper with 2 tbsp oil to a large pan and cook until tender. Add turkey and saute until cooked through.
  3. When potatoes are done, place them in a large bowl with turkey mixture and all remaining ingredients. Stir to combine and place mixture in a 9 x 13 glass dish and cover with foil.
  4. Reduce oven temperature to 375 degrees. Place covered dish in oven for 20 minutes. Uncover and bake an additional 20 minutes. Serve and enjoy!
